Salt-rim a highball glass and fill with ice.
Add tequila, grapefruit juice, lime juice, and simple syrup.
Top with soda water and stir gently.
Garnish with a grapefruit wedge.
The Paloma: Mexico’s Real National Cocktail
While the Margarita gets international fame, the Paloma is what Mexicans actually drink. “Paloma” means “dove” in Spanish.
The Squirt Shortcut
Many Mexican bars use Squirt (a grapefruit soda) instead of fresh juice + soda. It’s faster and still delicious — this is the authentic Mexican way.
