Chicha morada cocktail: Peru in a highball
Chicha morada is Peru’s everyday refresco, boiled from purple corn with pineapple skin, cinnamon and cloves, then sharpened with lime. Spiked with white rum, it becomes a deep violet highball that tastes like spiced fruit punch while still drinking like a proper cocktail.
What goes in, and why
- 120 ml / 4 oz chicha morada — the base, and it already carries sweetness and spice.
- 30 ml / 1 oz white rum — a clean column-still rum keeps the corn and clove in front.
- 30 ml / 1 oz fresh lime juice — the acidity that stops the drink reading as a soft drink.
- 15 ml / 1/2 oz simple syrup — optional. Taste the chicha first; many batches need none.
Measures for one and six
| Build | Chicha morada | White rum | Lime juice | Simple syrup |
|---|---|---|---|---|
| Single serve | 120 ml / 4 oz | 30 ml / 1 oz | 30 ml / 1 oz | 15 ml / 1/2 oz |
| Pitcher, 6 serves | 720 ml / 24 oz | 180 ml / 6 oz | 180 ml / 6 oz | 90 ml / 3 oz |
For a pitcher, shake the rum, lime and syrup in batches over the chicha, then add ice at the last moment so the drink does not flatten.
How strong is a chicha morada cocktail?
With 30 ml of 40% ABV rum in a drink of about 195 ml, the finished cocktail sits at around 7% ABV, roughly 12 ml of pure alcohol and about 170 kcal.
Technique
Shake the rum, lime and syrup with ice for 12 seconds, strain into a chilled highball over fresh ice, then top with the chicha morada and stir once from the bottom. Never shake the chicha itself: it foams and you lose the clean violet look. If you boil your own, simmer the corn with pineapple peel for 45 minutes and cool it completely before it goes near the rum.
Variations and FAQ
- Chicha morada sour — add one egg white and dry shake for a violet foam.
Which rum works best?
A white or lightly aged column-still rum. Spiced rum carries its own cinnamon and vanilla, which muddles the spicing already in the chicha.
Can I use purple corn syrup instead?
Only as a shortcut: 30 ml of syrup topped with soda and lime gives a similar colour but loses the pineapple and clove depth.
