Douglas Ankrah created the Pornstar Martini in London in 2002, and the detail most people get wrong is the side serve. The shot of sparkling wine is not meant to be poured into the drink; it is a chaser, sipped between mouthfuls to reset your palate.

Texture and balance

Passion fruit puree gives body, seeds and aroma, while lime stops the drink becoming cloying and vanilla vodka supplies the dessert note. If your puree is already sweetened, cut the syrup entirely.

How to shake it so the foam holds

Shake hard for 12-15 seconds with cubed ice and double strain, because the puree throws pulp and seeds. The pectin in passion fruit builds a light foam on its own; for a dense meringue cap, add 15 ml of aquafaba and dry shake first. Float half a passion fruit on the foam, cut side up, and serve the sparkling wine in a chilled shot glass.

How strong is a Pornstar Martini?

At 40% vodka and 20% liqueur, the build above is roughly 13-14% ABV once shaken and diluted, with about 21 ml of pure alcohol and 200-220 kcal before the side serve.
