Mocktails & Alcohol-Free Cocktails

A good mocktail is not a cocktail with the spirit removed: take the alcohol out and you also take out the body, the bite and the aromatic lift that held the drink together. This page explains what replaces each of those, and gathers the alcohol-free recipes in our library next to the ones that document a 0.0% build in their own text.

The first block is alcohol-free because of its ingredients; the second collects recipes that explain a 0.0% build in their text, and the badge marks those.

Building a drink with no alcohol

Replace the body, not just the liquid. Alcohol carries aroma and gives a drink weight. Non-alcoholic spirits distilled from botanicals — 0.0% or, in the EU, legally anything under 0.5% ABV — or a strongly brewed tea such as lapsang for smoke or hibiscus for tartness restore much of that. A pinch of salt does the rest: it suppresses bitterness and makes a flat mix taste rounder.

Rebalance the sugar and the acid. With no alcohol burn, sweetness reads twice as loud and the drink collapses into syrup. Cut the syrup by a third and add acidity on top: fresh citrus plus a little verjus, a vinegar shrub or acid-adjusted juice. A 0.0% drink usually wants more acid than its alcoholic original, not less.

Finish with bubbles and dilution. Carbonation supplies the texture and the lift that alcohol normally provides, so build over plenty of ice and add soda, tonic or ginger beer last, or the gas escapes while you stir. Two warnings: 0.0% sparkling wines lose their bubbles faster than the real thing, and a chilled glass stops any mocktail turning watery.

Frequently asked questions

Is a mocktail just a cocktail without alcohol?

In practice yes, but the ratios move. Removing 50 ml of spirit leaves a hole in the volume, the acidity and the sweetness at once, so a straight substitution usually needs extra citrus, less syrup and more soda.

Are non-alcoholic spirits really 0.0%?

Not always. In the EU, alcohol-free generally means under 0.5% ABV, while 0.0% means what it says. Check the label if you need a genuinely zero drink for medical, religious or pregnancy reasons.

Can I make any cocktail recipe alcohol-free?

Almost any highball or sour works: keep the citrus, the syrup and the mixer and swap the spirit for a 0.0% equivalent, tea or soda. Stirred drinks built on a single spirit, such as a Martini or an Old Fashioned, are the hardest to imitate because there is nothing else to hide behind.
