Rum Punch and the rhyme behind it
Barbados punch houses worked to a jingle: one of sour, two of sweet, three of strong, four of weak. Read the measures above against that rule and the drink already balances itself — the juices cover sour and weak, the grenadine covers sweet, and the two rums cover strong.
What each rum is doing
Light rum is the engine. Four ounces of nothing but molasses-heavy spirit tastes muddy, so the clean distillate carries the alcohol without arguing with the pineapple. The dark rum is the seasoning: a proportion of aged, pot-still spirit brings burnt sugar and a smoky edge that reads as depth rather than as sweetness. Blend the two rather than choosing one.
Grenadine is structural, not decorative
An ounce looks extravagant next to a modern spec, and that is the point. Pineapple is aggressively tart while orange juice is soft and bland, so pomegranate syrup tightens the finish the way lime tightens a Daiquiri.
Punch for eight
Multiply every liquid by four: 8 oz light rum, 8 oz dark rum, 16 oz pineapple juice, 8 oz orange juice and 4 oz grenadine. Stir in 8 oz of cold water, because a bowl never receives the dilution a shaker gives a single serving, then chill the mix for an hour. Serve over one large block of ice rather than cubes, which water the punch down before the first glass is finished. Float citrus wheels and grate nutmeg across the surface.
How strong is rum punch?
Roughly 11% ABV in the glass once the ice has done its work, and about 220 kcal per serving between the rum and the syrups.
Mistakes that flatten the drink
- Juicing to order but never chilling the mix, so the ice melts and the punch turns watery.
- Using bottled pineapple drink instead of 100% juice, which adds sugar and no acidity.
- Adding extra grenadine to rescue a sour batch, which only makes it sweeter.
Two riffs worth trying
Swap the orange juice for passion fruit pulp for a Trinidadian slant, or replace the dark rum with a Jamaican overproof for a punch with real heat.
Does rum punch have to use two rums?
No, but a single bottle leaves a gap. If you keep only one, use an aged amber rum and accept a simpler drink.
Can it be mixed ahead?
Yes. Combine everything except the ice up to a day in advance and refrigerate; add the block of ice when the guests arrive.
