Cut the lime into 8 wedges, removing the bitter white pith from the center.
Place lime wedges and sugar in a rocks glass.
Muddle firmly to release all the juice and oils.
Fill the glass with crushed ice.
Pour cachaça over and stir well.
The Caipirinha: Soul of Brazil
Brazil’s national cocktail uses cachaça — a sugarcane spirit distinct from rum (rum uses molasses, cachaça uses fresh sugarcane juice). This gives the Caipirinha its uniquely grassy, funky character.
Cachaça vs Rum
Don’t substitute rum — the flavor profile is entirely different. Look for quality artisanal cachaças like Novo Fogo or Ypióca.
