London Dry Gin 2 oz
Fresh Lemon Juice 1 oz
Simple Syrup 0.75 oz
Soda Water 3 oz
Lemon slice & cherry garnish

Combine gin, lemon juice, and simple syrup in a shaker with ice.

Shake briefly (5 seconds) — just to chill, not dilute.

Strain into a tall Collins glass filled with ice.

Top with cold soda water.

Garnish with a lemon slice and maraschino cherry.

The Tom Collins: A Drink with a Backstory

In 1874, New York saw a bizarre prank: people would tell friends that “Tom Collins” was talking trash about them at a nearby bar. The friend would run to confront Tom Collins, who didn’t exist. The joke became a cultural moment — and eventually a cocktail.

The Collins Glass
