Add mint leaves and simple syrup to a highball glass.
Gently muddle the mint — press and twist, don't shred.
Add lime juice and fill the glass with crushed ice.
Pour in the rum and stir gently with a bar spoon.
Top with soda water and garnish with a mint sprig and lime wheel.

The Muddling Secret
Never over-muddle mint. Gentle pressure releases the aromatic oils from the leaves without releasing the bitter chlorophyll from the stems. 5-6 gentle presses is all you need.
Rum Selection
A light, dry Cuban-style white rum works best. Bacardí Superior or Havana Club 3 Year are classic choices.
